On my first night in Aruba, I walked along Palm Beach Road and found 2 Fools and a Bull.? Guests were strolling about the restaurant with glass of wine in hand waiting for the next course to be served.? I stepped inside the early 1900?s cunucu house expecting to find a wait staff somewhere.? Instead, I was greeted by one of the ?2 Fools? ? Paul.? He took note of my food preference and added me to the dinner party two nights later.
The other fool is the chef, Fred.? Every evening, Paul and Fred put together a dinner party for about a dozen guests.? While Paul makes sure no one?s glass is empty and everyone is having a good time, Fred is busy preparing the guests? five course dinner.? The bull refers to the grill in the dining room.? It is not used this evening.
Instead of a menu, Paul unveils what we will be having on a blackboard and describes the various wine pairings.? The five courses are different each night and are decided with careful consideration to everyone?s allergy and preference.? Alternative dishes are made for those with very specific needs.? For most of us, the starters are Duck Breast with Caramelized Apple and Shrimp Ravioli with Shot of Lobster.?
Almost just enjoyable as the food itself is watching the preparation.? All the courses are made as the meal takes placed.? Before the dishes are served, I look inside the kitchen to watch the apple get caramelized and the halibut fillets turn crisp and golden on the outside.???
The two main courses are Halibut with Herb Risotto and Classic Beef Wellington.? It may appear to be too much food.? But, since there are breaks between each dish for people to drink and mingle and the portions are of just the right size, there is enough appetite for everything, even dessert.
Dinner ends with a dessert trio ? Strawberry Brule?, Choco Mousse Cupcake, and Vanilla Parfait ? and tea.? Before I realize, it is already half past ten, bus service for the day is ending soon, I just have dinner for more than three hours with complete strangers, and it is actually quite fun.
